    Everyone in my house is on a diet (including myself) so I decided to stop torturing everyone with cupcakes etc and decided to make something a bit healthier. So I made some bran muffins! Oooh exciting, I know. They don’t actually taste that hideous, I do wish I could cover them in cream cheese frosting though. Anyway, if I have tempted you to make some boring healthy treats, here is the recipe I concocted. 

    • 75g All Bran
    • 200ml skimmed milk
    • 150g self raising flour
    • 1tsp baking powder
    • 60g or 3 bags of ‘Frootz’ dried strawberries, or the equivalent.
    • 20g of goji berries (for extra antioxidant goodness)
    • 2 eggs
    • 50g margarine
    • 20g soft brown sugar

    Heat up the milk and soak the All Bran for about 5 mins, then mix in everything else apart from the brown sugar. Spoon into 9 muffin cases and sprinkle brown sugar on top.

    Bake on gas mark 5 for 20 minutes.

    NOTE: I ran out of brown sugar so I used caster sugar- it didn’t work as well!

2 ripe bananas (210)
1 tablespoon lemon juice (4)
Preparation1. Cut the bananas into thin slices.2. Coat the slices in lemon juice.3. Place the banana slices on parchment paper and bake them in the oven at 200 degrees F, turning every half hour and watching out for burning.4. Remove them when they are crispy; let them cool, and store them in an airtight container.
Makes six servings with 36 calories, 0.1g fat, 1g fiber per serving.
